In September 2013 Kurt opened Chotto Matte in Soho’s Frith Street bringing together the best of Japanese and Peruvian cultures serving up high-quality Nikkei cuisine and colourful cocktails in vibrant, loud atmosphere.

Sushi sous chef 6 – 8 years’ experience in a kitchen, underpinned values from all aspects regarding standard preparations, health and safety, and general kitchen knowledge, food trends, training, menu development are expected within the role, worked experience must be brought to trial to showcase, fish knowledge and preparation, sushi expertise and leadership all are encompassed, no previous Peruvian cuisine experience needed but helpful.
